Steak & Eggs, But Make It Cozy

This is not a light breakfast. This is a sit-down, cancel-your-plans, respect-the-plate kind of breakfast.
A perfectly medium-rare steak, cooked in the air fryer for just 6 minutes (because efficiency and flavor can coexist), topped with pillowy poached eggs that are one gentle poke away from absolute yolk chaos (aka medium poached!!).
Underneath? A full bed of roasted root vegetables doing the most:
Kabocha squash
Yams
Parsnips
Baby potatoes
All roasted until golden and caramelized, then paired with deeply sautéed mushrooms and peppers that bring that rich, savory balance you only get when you don’t rush the pan.
This is classic steak and eggs energy, but elevated. Cozy. A little dramatic. The kind of breakfast that makes the kitchen smell incredible and the person eating it very, very quiet.

Steak & Eggs — The Weisey Way

Ingredients
Steak & Eggs
1 good-quality steak (sirloin, striploin, or ribeye)
2–4 eggs
Salt & black pepper, to taste
Garlic powder (optional)
Olive oil or avocado oil
Roasted Root Vegetables
1 cup kabocha squash, diced
1 cup yam, diced
1 cup parsnips, diced
1 cup baby potatoes, diced
Olive oil
Salt, pepper
Optional: paprika, thyme, rosemary, seasoning salt, garlic
Sautéed Mushrooms and Peppers
1 cup mushrooms, sliced
1 bell pepper, sliced
½ small onion, sliced
Olive oil
Pinch of salt
Instructions

Roast the Root Vegetables
Preheat oven to 400°F (205°C).
Toss squash, yam, parsnips, and potatoes with olive oil, salt, pepper, and any optional herbs.
Spread evenly on a baking sheet.
Roast for 30–35 minutes, flipping halfway, until golden and tender.

Cook the Steak (Air Fryer)
Pat steak dry and season generously with salt, pepper, and garlic powder if using.
Preheat air fryer to 400°F (205°C).
Cook steak for 6 minutes total for medium-rare, flipping halfway.
Rest steak for 5 minutes before slicing or serving.

the Mushrooms & Peppers
Heat olive oil in a pan over medium heat.
Add mushrooms, peppers, and onion.
Sauté until soft, caramelized, and slightly golden.
Season lightly with salt.

Poach the Eggs
Bring a small pot of water to a gentle simmer (not boiling).
Add a splash of vinegar (optional).
Crack eggs into individual ramekins, then gently slide into water.
Poach for 3–4 minutes until whites are set and yolks are soft.
Remove with a slotted spoon.
Assemble
Layer roasted root vegetables on the plate → add sautéed mushrooms and peppers → top with steak → finish with poached eggs.
Break the yolk. Enjoy immediately.
