This simple and vibrant watermelon salad is one of my favorite salads! It's light, tangy, and packed with flavor. Tossed with fresh lemon juice, chopped mint, a touch of salt and pepper, then finished with crumbled goat cheese (or feta cheese for a twist), fresh dill, and lemon zest, it's the perfect combination of sweet, savory, and refreshing. Whether you're enjoying it on its own, as a side dish, or as a unique appetizer, this salad never disappoints.


Ingredients:

  • 4 cups of watermelon, cubed

  • 2 oz goat cheese, crumbled (or feta cheese, for a variation)

  • 2 tbsp fresh mint, chopped

  • 1 tbsp fresh dill, chopped

  • Zest of 1 lemon

  • Juice of 1 lemon

  • Salt and pepper, to taste


Instructions:

  1. Prepare the Watermelon: Begin by cutting your watermelon into small cubes or use a melon baller for a fun touch! Arrange them in a large mixing bowl.

  2. Add Fresh Mint: Chop your fresh mint and sprinkle it over the watermelon. The mint adds a burst of freshness to the salad.

  3. Dress the Salad: Drizzle the watermelon and mint mixture with fresh lemon juice. This not only brightens the flavors but gives the salad a refreshing tang. Add a pinch of salt and pepper to taste. Mix gently to combine the ingredients.
