Sushi Sandwich Magic: A Fun and Flavorful Twist

These Sushi Sandwiches are a fun and easy way to enjoy sushi in a convenient, handheld form. They are filled with fresh ingredients like crab, avocado, mango, and cucumber, all wrapped in a crispy nori sheet. Perfect for a quick meal or snack!
Recently, my co-worker and I decided to get creative during lunch and made these at work. It was such a fun experience experimenting with different fillings and sharing the results. Not only were they delicious, but they also turned our lunch break into a mini sushi-making session!

Ingredients (Makes 4-6 sandwiches)
Base:
2 cups cooked sushi rice or quinoa (seasoned with 2 tbsp rice vinegar, 1 tbsp sugar, and ½ tsp salt)
4-6 sheets nori (seaweed)
4-6 rice paper sheets (optional for extra hold)
Fillings:
6 imitation crab sticks (sliced or shredded)
½ avocado (sliced)
½ cucumber (julienned)
½ mango (thinly sliced)
Fresh Pea Shoots (optional)
Sauces & Toppings:
2 tbsp Japanese mayonnaise (Kewpie or regular mayonnaise)
1 tbsp sriracha (adjust to taste)
1 tbsp unagi (eel) sauce (optional)
1 tbsp sesame seeds (for garnish)
Instructions
1. Prepare the Sushi Rice:
Rinse sushi rice under cold water until the water runs clear.
Cook according to package instructions.
While warm, mix in rice vinegar, sugar, and salt. Let it cool.
2. Prep the Fillings:
Slice avocado, cucumber, mango, and crab sticks into thin strips.
Mix mayo and sriracha to make spicy mayo.

3. Assemble the Sushi Sandwiches:
Lay a nori sheet on a flat surface.
Cut the nori sheet from the center towards the edge, creating four quadrants.
Place a small layer of rice in one quadrant near the center cut.
Arrange crab, avocado, cucumber, and mango on top.
Drizzle with spicy mayo and unagi sauce (if using).
Fold the nori into each quadrant until a square sandwich is formed, then wrap tightly in plastic wrap to secure it.
Cut diagonally in half when ready to serve.
4. Optional Rice Paper Wrap:
Dip rice paper in warm water until soft.
Wrap around the sushi pocket to keep everything intact.
5. Serve & Enjoy:
Sprinkle with sesame seeds before serving.
Enjoy immediately or save for later.

Pro Tips:
Crunchy Add-ons: Add tempura flakes for a crispy texture.
Extra Protein: Substitute crab with shrimp, tuna, salmon, tempura prawns, or smoked salmon.
Vegan Version: Use tofu, avocado, mango, or tempura yam.
Storage: If unable to eat right away, wrap in a damp paper towel and then in plastic wrap to keep the rice fresh and prevent drying out.
